I have mixed feelings about the people going gluten free as a dietary choice; as someone with Celiac, I now have a lot more options for GF food than ever before because there's now a market for it. On the other hand, how long is this going to last? I'm not looking forward to the day when a lot of the products I now enjoy have been pulled from the shelves because the new next big thing has arrived.

There's also the social issue of getting lumped in with people doing this because it's a fad. It's not easy being a Quaker when someone tells me that I'm only ordering GF items in restaurants to "get attention and should get over myself".

I am right there with you, biomekanic. I've had celiac my whole life, diagnosed when I was four. I think people are nuts when they do it as a lifestyle choice, but I bless em. EVERYTHING is gluten free now, and I can take my celiac kids to a donut shop, to get ice cream with our own cones, to half a dozen bake shops near our place, etc.

My wife eats less gluten now and she has some digestive issues when she does. I think that has more to do with enriched white flour and processed ingredients than any actual storage protein, but I'm no biologist to prove it.
